Since we are moving in a few months I am trying to use up some of my preps so we won't have to haul so much. Tonight except for the fresh milk I used everything else I made supper with came from my food preps.
To make the pork carnita rice I used two pints of my home canned pork loin and the recipe for making pork carnitas. I combined everything and let it simmer for a half hour on low heat in my cast iron dutch oven.
I made a pan of long grain rice and opened a can of store bought tamales that my husband likes. I placed a spoon of rice on the plates and then ladled the pork carnita over top the rice. Place 3 tamales on each plate and this was our entree.
For dessert I made a Quick Skillet Cobbler and served it warm with a little milk poured over it. Boy was it good. YUM!
Here is the recipe for the cobbler.
Quick Skillet Cobbler
1/2 stick butter
1 cup sugar
1 teas. baking power
1 cup all-purpose flour
1/2 teas. salt
1//2 cup milk
1 teas. vanilla
2 cups sliced fruit - fresh, frozen or canned (if use canned fruit drain the liquid off)
Melt the butter in a 10 inch cast iron skillet in a 350 degree oven.
Add milk, vanilla and half the butter to the dry ingredients and mix well. If batter is too thick add a little more milk
Add sliced fruit and stir. In this cobbler I used canned peaches that I had let drain for 20 minutes.
Serve warm in bowls with a scoop of vanilla ice cream or a little milk and listen to the praise you will receive from your loved ones when they dig in to this little bite of heaven. :)
